Ingredients:
- 2 cups plain flour
- 1 teaspoon cinnamon
- 1/2 cup castor sugar
- 1/2 cup currants
- 1/2 cup sultanas
- Grated rind 1 large orange
- 125g (4oz) margarine, melted
- 1 teaspoon bicarbonate of soda
- 2/3 cup milk
- 1 teaspoon vinegar
Method:
Sift flour and cinnamon into a basin. Stir in sugar, currants, sultanas and orange rind. Add melted margarine. Dissolve bicarbonate os soda in the milk and stir in vinegar. Pour onto ingredients in basin and beat with wooden spoon until evenly mixed.
Place in a greased deep 20cm (8in) cake tin and bake in a moderate oven approx 1 hout until cooked. Test with a fine skewer before removing from oven. Cool slightly before removing from tin.
