Ingredients:
- 2 tablespoons butter or margarine
- 1 cup honey
- 1 egg, beaten
- 2 1/2 cups self-raising flour
- 1/2 teaspoon bicarbonate of soda
- 1/2 teaspoon salt
- 3/4 cup milk
- 3/4 cup chopped walnuts
Method:
- Beat butter or margarine and honey until creamy in a large bowl with electric mixer at high speed; beat in egg.
- Sift flour, bicarbonate of soda and salt onto waxed paper. Stir into honey mixtures alternately with milk. Add walnuts. Turn into greased 23 x 13 x 8 cm loaf tin.
- Bake in moderate oven 1 hour 10 minutes, or until centre springs back when lightly pressed with fingertip. Cool in tin on wire rack for 5 minutes. Loosen cake around edges with a sharp knife. Turn out of tin. Cool completely.
